The product is white or yellowish-white powder, extremely difficult to dissolve in water and in vegetable oils, with slightly citrus-like odor. It is easily soluble in ethanol and methanol and hardly soluble in dichloromethane and fatty acids.

Product Features :
Ascorbyl palmitate,  having all physical activities of vitamin C, is a highly efficient antioxidant and a scavenger of oxygen free radicals. It is rated as a nutritious, efficient, and safe food additive, by the World Health Organization (WHO) Food Additives Committee. In China, it is the only antioxidant allowed to be used in infant food. It works, in food industry, as an antioxidant, color protector, and vitamin C enhancer, etc.

Ascorbyl palmitate is a fat-soluble derivative of vitamin C, formed from ascorbic acid and palmitic acid, highly bioavailable to support a healthy immune system. It is able to reach tissues and other areas that ascorbic acid can not be, and can be stored in the membranes of your cells until your body needs it.

It provides a number of health benefits including:

Ascorbyl Palmitate acts as a potent antioxidant, and may be as powerful, if not more, than vitamin E. It may also keep lipids from oxidation.

It is an amphipathic molecule, meaning one end is water-soluble and the other end is fat-soluble. This dual solubility allows it to be incorporated into cell membranes. When incorporated into the cell membranes of human red blood cells, ascorbyl palmitate has been found to protect them from oxidative damage and to protect α-tocopherol (a fat-soluble antioxidant) from oxidation by free radicals .

The presence of ascorbyl palmitate in oral supplements contributes to the ascorbic acid content of the supplement and probably helps protect fat-soluble antioxidants in the supplement.

The roles of vitamin C in promoting collagen synthesis and as an antioxidant have generated interest in its use on the skin. Ascorbyl palmitate is frequently used in topical preparations because it is more stable than some aqueous (water-soluble) forms of vitamin C.

Application area:
1. Food industry: Antioxidant; color protectors to protect natural colors susceptible to oxidation (such as capsanthin, lycopene, carotene, lutein, etc.)
   As a fat-soluble antioxidant, suitable for use in animal, vegetable oil and a variety of foods, such as stable soybean oil, cottonseed oil, palm oil, unsaturated fat and hydrogenated vegetable oil has a significant effect; , fried barbecue products, etc.).  
2. Daily chemical supplies: fat-soluble plaque whitening.  
3. Drug health care: protect the effective ingredients of the drug to prevent oxidation;Vc nutritional foretifiers, compared to Vc without gastrointestinal stimulation.
